Below you will find some of our favorite recipes using our Riverside Farm Meats.  Enjoy!

 

One-Pan Pork Sausage Dinner

Serves 3-4 People

Ingredients:

  • 1/2 red or white onion
  • 2-3 carrots
  • 1 medium zucchini
  • 3-4 cloves Fresh Garlic
  • 1lb Riverside Farm Mild or Extra Sage Pork Sausage
  • 1 cup White Rice
  • 2 Cups Vegetable or Chicken Stock
  • Salt and Pepper to Taste
  • Olive Oil

Instructions:

  • Chop up onions, carrots, zucchini into small to medium sized pieces
  • Chop garlic 
  • Using a Large Sauce Pan, add Olive oil and saute the onions, carrots and zucchini until the onions are browned
  • Add the Garlic to the mix and saute for another minute or two.  Add Salt and Pepper to taste
  • Add the Pork Sausage and cook until the meat is browned
  • Once the meat is browned, add 2 cups of Chicken or Vegetable Stock to the pan
  • Add 1 cup of Rice and bring to a boil
  • Reduce heat to Low and let it simmer until Rice is cooked
  • Once Rice is cooked, remove from heat and enjoy!

 

Very Simple Whole Roasted Chicken

Ingredients:

  • 1 Riverside Farm Whole Chicken
  • Olive Oil
  • Salt and Pepper

Instructions:

  • Place cast iron skillet into the oven and heat to 500F
  • Cover the chicken with Olive Oil and season with Salt and Pepper
  • Once the skillet and oven are hot, carefully add the Whole Chicken to the skillet breast side up.  Roast the chicken for 15 minutes then turn the temperature down to 350F
  • Continue to cook the chicken for another 35-40 minutes until the chicken is golden brown.  Use an instant meat thermometer to measure the internal temperature of the chicken.  Once it reaches 155F-165F it is ready.
  • Remove the chicken from the oven, carve and enjoy!

 

Turkey Meatballs in Tomato Sauce

Ingredients for Meatballs:

1lb Riverside Farm Ground Turkey

1 cup bread crumbs/panko breading

1 small bunch spring onions, finely chopped

2 Tbsp Fresh Basil, finely chopped

2 Tbsp Fresh Parsley, finely chopped

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried oregano

1 egg

For Tomato Sauce:

4 cloves garlic

1/4 cup red wine

2 cans diced tomatoes

1/4 cup tomato paste

1 tsp paprika

1 tsp salt

1/2 tsp black pepper

To serve:

Your favorite pasta/spaghetti

 

Cooking Instructions:

  • Mix together the ingredients for the meatballs in a large bowl.  Roll mixed meatball ingredients into balls roughly the size of golf balls
  • Heat a large saucepan on medium heat.  Add olive oil and fry the meatballs all at once.  Use a saucepan large enough so that all the meatballs fit into the bottom of the pan.  Use tongs to gently turn them once or twice, making sure not to break them
  • When the meatballs are browned, scatter the chopped garlic into the pan with the meatballs and fry for another minute or so
  • Add the wine and shake the pan lightly to looses any browned or stuck bits on the bottom
  • When the wine is almost completely reduced, add the tomatoes, tomato paste, paprika, salt and pepper.  Bring to a boil and let it simmer uncovered over medium to low heat for about 15-20 minutes
  • Remove from heat when finished cooking, add some grated parmesan cheese and serve over a bed of pasta
